What Is Pumpkin Seed Oil?

Pumpkin seed oil is a dark green culinary oil made by pressing roasted pumpkin seeds. It is best known as a traditional specialty from the Styria region of Austria and Slovenia, where it has been produced for centuries.

Unlike many vegetable oils used for frying, pumpkin seed oil is typically used as a finishing oil. Its intense nutty flavor and deep color make it ideal for drizzling over dishes such as salads, soups, vegetables, and desserts.

Because the oil is produced from roasted seeds, it develops a rich aroma and complex taste that sets it apart from most other seed oils.

Where Pumpkin Seed Oil Comes From

Pumpkin seed oil is most closely associated with Styrian pumpkin seed oil, a traditional food produced in southeastern Austria and neighboring Slovenia. The pumpkins used for this oil belong to a special variety called: Cucurbita pepo var. styriaca These pumpkins produce seeds that naturally grow without a hard shell, making them ideal for pressing into oil. Styrian pumpkin seed oil is so important to regional culture that it is protected in Europe by a Protected Geographical Indication (PGI) designation. This protection helps ensure authentic oils are produced according to traditional methods.

Why Pumpkin Seed Oil Is Dark Green

One of the most striking features of pumpkin seed oil is its deep green color.

 

The color comes from naturally occurring plant compounds in the seeds, including:

  • chlorophyll

  • carotenoids

  • phenolic compounds

 

Interestingly, pumpkin seed oil can also appear reddish when spread thinly, a phenomenon sometimes described as a dichromatic effect.

This visual characteristic is often used as an indicator of authentic pumpkin seed oil.

How Pumpkin Seed Oil Is Made

Traditional pumpkin seed oil is produced through a multi-step process.

1. Harvesting Pumpkin Seeds

Oil pumpkins are grown specifically for their seeds. After harvest, the seeds are cleaned and dried.

2. Grinding the Seeds

The seeds are ground into a thick paste.

3. Roasting the Paste

The paste is gently roasted, which develops the oil’s characteristic nutty flavor and dark color.

4. Pressing the Oil

The roasted paste is pressed to extract the oil.

 

This roasting step is what gives pumpkin seed oil its distinctive aroma and taste.

Pumpkin seed oil has a flavor profile that is very different from neutral cooking oils.
